With our still-lingering long days and all the picturesque choices to grab a cocktail and a snack, the summertime heat makes one’s appetite crave something simple, shareable, and seasonal-fresh. Find some inner peace at the recently opened The Lodge at St. Edward State Park, the converted seminary that is now home to a boutique hotel and several eateries/cocktail bars, including its main restaurant, Cedar + Elm. Celebrated Seattle chef Jason Wilson has designed the dining experiences for the lodge. Flatbreads are among favorites on the Shareables menu. Choices include delectable toppings, like a prosciutto and black truffle fontina sauce-topped flatbread with Yakima asparagus as well as an “Everything” Spiced Flatbread with smoked salmon, onion, dill crème fraîche, and capers. As a shared starter to a larger meal, or just a summery snack to pair with one of the lodge’s signature cocktails, it’s a delicious way to raise a glass to a gradual return to the things we’ve missed.
